ginger sesame soba with kale

so is anyone else totally consumed with vegan mofo?  i love all of the new blogs that i'm discovering!  the only thing getting me down is that i can't possibly read all of the mofo posts.  but everyone is doing such a great job - hurray for vegans!

today i'm sharing a really yummy dish that i made a few nights ago.  we didn't have much time to eat before needed to head out somewhere so this dish was great - the whole thing came together in about 15 minutes!
 
{ginger sesame soba noodles with kale}

ginger sesame soba with kale 
serves 4
for the sauce
1 inch nub of ginger
1 clove garlic
1 tsp sweetner of your choice {i used brown sugar}
1 tsp sriracha {optional}
2 tbsp rice vinegar
4 tbsp tamari
1 tbsp extra virgin olive oil
1 tbsp toasted sesame oil

8 oz dried soba noodles
                 -------
1/2 pkg extra firm organic tofu, pressed & cubed {about 1 cup}
2 tbsp organic corn starch
1 tbsp extra virgin olive oil
                 -------
1/2 bunch kale, about 2 packed cups worth
1 cup broccoli florets
1 tbsp toasted sesame oil

to make the sauce, place all of the ingredients {from ginger to sesame oil} in a blender or food processor and blend until smooth.  set sauce aside.  boil a pot of water and cook the soba noodles according to package directions.  while the noodles cook, heat 1 tablespoon of olive oil in a large skillet.  coat the tofu cubes in corn starch and fry until a crispy coating forms, about 2 minutes a side should do the trick.  while the tofu cubes were cooking i also seasoned them lightly with salt and pepper.  remove the tofu and place aside so that you can cook the greens and assemble the dish.

heat the last 1 tablespoon of sesame oil and add in the kale & broccoli.  saute for 1-2 minutes until slightly softened and bright green in colour.  at this point, crank the heat and add in the cooked soba noodles and the sauce.  toss well and heat through.  serve immediately, with the tofu on top. {if you add the tofu to the pan, the crispy coating will quickly become soft.}  if you love spicy heat, you can always top with more sriracha!

  3. I too am completely consumed by MoFo, I don't want to feel like I'm missing out on anything awesome so I'm staying up late reading again! Your ginger sesame soba with kale looks delicious & I can;t wait to hear more about this french toast cupcake.

  6. Totally overwhelmed with vegan mofo. When I'm not reading blogs, I'm cooking! But it's a good thing for now.
    This dish looks great. I love soba for how quickly it cooks and how filling it is.
    So, will you be revealing pictures of how green you turned after eating all this kale for a month?

  10. This sounds amazing. I've never tried to pan fry tofu before, but with that little amount of oil (I thought it would take more), I just might try it! I've had some soba noodles hanging out in the cupboard for quite a while now. I don't think they'll be in there for long ;-)

    I'm totally feelin' ya about the MoFo craziness, but I love it! I need to take the rest of the month off just to read and cook...and eat! But if I don't go to work, who will I feed all of my food to? Ha ha ha
