pumpkin scones

do you ever wish that the seasonal pumpkin scones at starbucks were vegan?  i do sometimes.  i had my fair share of these in my years prior to adopting a vegan diet, and although i know their nutritional content is nothing to write home about, i do remember them being quite tasty.  check out the ingredient listing though - it's a mile long.

hmm, on second thought, maybe i'm just fine with the fact that they're not vegan. 
i'll take my fresh small batch homemade vegan version, thank you very much!

{vegan pumpkin scones}

last night i fell asleep thinking about scones.  this morning i woke up and set to it.  25 minutes later i had pumpkin scones fresh from the oven.

pumpkin scones
makes 1 dozen
1 cup organic all purpose flour
1 cup whole wheat pastry flour
1 tbsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
1/2 tsp salt
1/4 cup + 2 tbsp cup cold earth balance margarine
1/2 cup pumpkin puree
2 tbsp non-dairy milk {i used vanilla soy}
5 tbsp brown sugar

preheat the oven to 400f.  in a large bowl sift together all of the dry ingredients.  using a pastry cutter {or 2 forks} cut the cold earth balance into the mixture until it resembles coarse crumbs.  in another bowl, mix the pumpkin, milk & sugar.  add this to the flour bowl and mix to combine.  you'll end up with a fairly dry dough.  {if it really doesn't come together you can add some water or more milk a teaspoon at a time.} 

turn this out onto a lightly floured surface and divide it into 3 equal balls.  flatten each one into a round disk that's about 6 inches across and 1/2 inch thick.  using a sharp knife, cut each disk into quarters and place them on a parchment or silpat-lined baking sheet.  bake for 15-16 minutes.  remove from the oven, allow the scones to cool and then drizzle them with spiced glaze.

5 tbsp powdered sugar
1/2 tbsp flour
1/4 tsp molasses
1/4 tsp cinnamon
1/8 tsp ginger
pinch cloves
1 tbsp non-dairy milk

mix everything together in a small bowl and drizzle onto the scones either with a spoon, or from a plastic bag with the tip cut off.

these are light and flaky and have a nice subtle pumpkin flavour, but the warm spices in the glaze put it over the top.  perfect for morning coffee or afternoon tea.

oh my scone, these are good.  and just like the real deal at starbucks.  only better.

  1. These look wonderful! I think the homemade version of many starbucks creations are much better. :) It just takes a little more time, but oh so worth it!

  2. I would much rather have one of these than one from Starbucks! I love pumpkin baked goods but have yet to try making scones. I may just be trying this recipe really soon. :)

  3. Okay I totally went to make these almost immediately after seeing your post! Your beautiful scones inspired me! And they're delicious. The glaze is just perfect with the scone. Though my dough was super crumbly (looks like it was a bit more crumbly than yours). But overall pumpkin scone success! Thanks for sharing. :)

  4. I wish I could go to sleep dreaming about these scones, only to find them waiting for me tomorrow. I go to sleep dreaming about chocolate a lot, but I always have chocolate in my kitchen. It's a must.

    These look so good, by the way. I have only been into a Starbucks maybe two or three times (and I live near Seattle!) so I haven't ever heard of pumpkin scones, but I'm sure I would like these.

  6. so perfect looking! My scones are clumpy blobs! I love that you used a spice glaze on these...I have a version but I can't remember what I brushed on top. Nothing this lovely.

  7. thanks heather - you're right, a little more work than buying one over the counter but SO worth it.

    eatme_delicious i love that you went straight to the kitchen to whip these up! :) if you make them again, and find the dough to be equally dry you could try to add in an additional tablespoon of non-dairy milk to the mix. so glad you enjoyed them too!

  12. I never have much luck with scone....nothing having to do with taste! Your recipe is delicious...but I noticed mine did not rise as high. They were a little more dense. Any ideas on how to remedy this for when I make these for Thanksgiving? Again, lovely recipe!

  13. PS I know my end result has nothing to do with your recipe! I'm pretty skilled at baking but something about scones and biscuits...or anything that requires a rolling pin leaves me nervous and confused.

  14. hi erica, sorry to hear these didn't work out for you! in terms of rising, maybe try to handle the dough as little as possible - when i make these, as soon as the dough comes together in the bowl, i dump it out and form it with my hands & it my rolling pin doesn't even make an appearance :)

    maybe also try chilling the bowl of dry ingredients & the bowl of wet before combining them - i think i've read somewhere that it might help. good luck!
