vanilla chia pudding

have you tried chia pudding yet?  if you have, then you likely either love it or you hate it.  {and if you haven't, newsflash: you're either going to love it or hate it.}  chia seeds have quite the texture... quite the, je ne sais quoi to them that some people find hard to handle.  just ask m - he's not a fan.  sometimes i can sneak them into our morning smoothie {especially easy to do when i throw a kiwi in because he thinks he's just crunching on kiwi seeds} - i'm not intentionally deceptive otherwise, promise.  anyways i stray.

i made this up yesterday as a midmorning snack/part two of my breakfast once my smoothie digested.  there must have been chia in the air, because then i saw that JL has mentioned on facebook that she was possibly one of the chia-fearing folk & linked up to gena's blog choosing raw for a whole series of pudding recipes including one for strawberry ginger chia pudding.  yum!

this pudding has a texture that others have compared to tapioca, but seeing as i don't think i've ever had tapioca, i can't confirm.  but i can confirm this to be a healthy sweet treat perfect for just about any time of day.

vanilla chia pudding with seeds & goji berries
makes 1 serving
2 tbsp chia seeds
3/4 cup almond milk
1/4 tsp pure vanilla extract
6-8 drops nunaturals vanilla stevia
{or replace with any other sweetener to taste: agave, maple syrup, etc}
1 tbsp raw pumpkin seeds
1 tbsp raw sunflower seeds
1 tbsp goji berries

whisk together the chia, milk, vanilla & sweetener and set aside for 30 minutes or more*.  top with seeds & goji berries.  eat pudding.  i've been enjoying this as a mid morning snack but it's also a nice after dinner dessert.  or breakfast.  or afternoon snack.

*chia are incredible little seeds that can absorb up to 12 times their weight in liquid!  the longer you wait the thicker {and more gelatinous} the pudding will get.  the biggest reason i like to wait about 30 minutes for my chia pudding to "set" is because if the seeds don't swell up before i eat them, i've found they continue to bulk up after i eat them.  in my stomach.  and for me, this can lead to a belly ache.  just ask any of my running mates.  last year i told them all about chia seed pudding and how wonderful it was, and then one day i ate some without letting it bulk up first on my way to one of our runs and my belly was so full and bloated i had to walk most of the run!  lesson learned.

phew - that's 2 lessons learned in 2 days.  not bad 2012, not bad at all....
{you can see my first lesson here}

special mention & thank you to my lovely friend emily who falls into the not a big chia fan group.  because of her i have a big bulk package of seeds since they were only collecting dust on her shelf.

but you know what they say, one woman's trash is another woman's... pudding?

  4. yes! they're great in overnight oats!

    chia kombucha? would that be like bubble tea-ish? i'm not sure i would like that either... i like the texture in a solid state, but little floating, gelatinous chia seeds might freak me out!

    there you go, you've called it now cara: "the year of the chia"! let me know me know if you're a lover or a hater once you try it ;)

  6. I had chia pudding for breakfast today - such an easy, quick breakfast - except for the sitting part. If you put it in a mason jar or tupperware, it can soak on your way to work though!

  7. So many people talking about chia pudding lately!! It was going to be my first breakfast after my little juice fast, but since my Vita is coming in the mail I think I have to make a smoothie. Soon though, I will rekindle my chia pudding love!

  8. I misread the title and thought it said Vanilla "Chai" Pudding which sounded amazing. But after rereading and learning it was a "Chia" pudding I super excited. I love me a chia pudding (but you're right...just not before running I learned the hard way too)

  9. I have yet to make it myself, but have eaten it at raw potlucks. I LOVE chia pudding! The texture is amazing, and I love that it's so versatile. You can add all kinds of flavours to it :)

  12. Mmmm ... I'm a fan of chia pudding. Love how it looked like baby roses on top when I first glanced at the photo. Okay, so maybe I was the only one with that thought :-)

  14. i've not tried chia yet.. its on my next to try this year. these days i get super busy just figuring out how to use up my local produce.. lots of greens and squashes..
    from the pictures it does look like tapioca.. the small tapioca pearls get all gelatinous and full too. as i was writing this comment i remembered an indian dessert called falooda, and i looked up the hindi name for chia.. and someone apparently says that the sabja seeds in falooda are chia.. i am intrigued.. i need to verify this..coz then that would mean i already ate a bunch of chia while growing up!

  16. This was a nice reminder that I haven't had chai seeds since this summer. I went through a overnight oats phase a while back and was eating them everyday for a while. So yummy!

  17. thanks kirsten! i've never tried bubble tea, but i imagine their texture to be something like that.

    i'm looking for those baby roses shannonmarie, but i still can't find them... is this like one of those optical illusion posters that you have to go cross-eyed for? ;)

    let me know what you find out richa, i'm intrigued too!

    nikki & maggie ~ glad i've got so many lovers on my side :)

  20. Just so you know, I have finally been able to cross off chia seed pudding on my "things to finally try" list. And let me tell, I love it! I put a tsp raw cacao powder in, slice up some almonds and a banana, drizzle some agave and I am in HEAVEN. I thank you every morning I make this for inspiring me to finally try it.

    Like the frog within the cooking pot. Place a frog in a pot of warm drinking water and he/she swims around happily, at a snail's schedule the temp. is raised until he is boiled to death. Verbal/emotional neglect is demoralizing and can paralyze you. It affects, you physically, emotionally, spiritually. GET OUT if you tend to be in a single, and look for councel from one who knows the devistation.
