this is by far our favourite pizza to make at home. and for the longest time we've been referring to it as a meat lovers pizza - i am not entirely sure why as there is no meat, nor any meat analogues to be found on it, but i suppose it's all the tempeh that makes it seem "meaty" to us. in any event, we decided tonight that a much more appropriate name for it is an animal lovers pizza. and so, it is now known as such.
it has a nice ring to it, don't you think?
i used to always make my own dough from scratch, but before woodrow was born i stocked my freezer with an ontario-made freezer pizza dough that i have since fallen in love with and i've never looked back. it has become one of our quick super filling dinners post-baby. (it's especially filling when 2 of you polish the whole thing off without a second glance. ahem.)
remember, it's just a pizza, so don't get too wrapped up in measurements!
animal lovers pizza
(also known as tempeh and greens 'za)
pizza dough, enough for 1 pizza
1 cup of sauce*
1/2 cup or so of vegan cheese shreds
1 cup tempeh crumbles
1 shallot, sliced
1 small zucchini, diced
1 cup shredded greens (for this one i used broccoli leaves from my csa, but usually it's kale)
lemon & tamari
*i never buy pizza sauce but instead take a nice bottled tomato passata & stir in a couple tablespoons of black olive tapenade. yum.
heat a little oil in a saute pan and add shallots and tempeh to cook for about 5 minutes. add in the zucchini and greens along with a squeeze of fresh lemon and a dash of tamari and continue to saute for 3-4 minutes. set aside.
roll out your dough and top with sauce, followed by the tempeh mixture and vegan cheese. sprinkle with a little nutritional yeast, then add a little more for good measure. cook at high heat according to the pizza dough recipe. then slice and devour like the animal lover you are.
